Young Chef of the Year Competition
We are immensely proud of our Chef de Partie, Jack Craven, for competing in this year’s Young Chef of the Year competition, organized by Chaîne des Rôtisseurs. Jack was entered into the competition by our Fletchers Restaurant Head Chef, Craig Atchinson, who has years of experience putting talented young chefs into the competition.
On the day of the competition each competing chef was given a basket containing various ingredients from which they had to compose a starter, main course and dessert. Jack created a sublime menu consisting of braised beef dumpling with oysters and mushrooms to start; followed by a delightful torched trout fillet, accompanied with crushed chive potatoes and vierge sauce for main course, and a heavenly crème brûlée with poached apple and toasted hazelnuts for dessert.
The criteria used to judge the competition was based on four different factors: skill of the chef, choice of ingredients used, timing, and cleanliness of the working area. Although Jack didn’t win the competition, the judges were extremely impressed with his menu and particularly enjoyed his Braised Beef Dumplings.
Here is what Jack has to say about his experience of competing in this year’s Young Chef of the Year Competition:
“It was a great privilege to take part in the Chaîne Young Chef of the Year cooking competition and even though I was slightly nervous to begin with I thoroughly enjoyed the experience. I was pleased with the dishes I prepared and it was great to hear the positive comments from the judges.
The support that Grantley Hall have given me since I started working here has been fantastic and I really enjoy learning from our experienced chefs like Craig.”
